Restaurant partitions often divide spaces with very different environmental and operational demands. Dining-room walls primarily support architectural finishes and customer-facing features, while kitchen partitions may encounter higher humidity, frequent cleaning and concentrated building services. Wall assemblies are therefore selected according to the conditions on each side rather than assuming one gypsum product and finish system is suitable throughout the entire restaurant.
Cooking equipment can require exhaust hoods, ductwork and make-up-air systems that occupy substantial wall and ceiling space. Drywall partitions, bulkheads and penetrations must be coordinated around these components without obstructing required equipment clearances or service access. Hood and duct systems can also involve specialized fire and mechanical requirements, so gypsum construction follows the specified surrounding assembly rather than being used as an improvised enclosure.
Food-preparation and dishwashing areas can require smooth, durable and readily cleanable wall surfaces appropriate to the intended use. Where FRP, tile or another sanitary finish is specified, the underlying gypsum substrate must remain sufficiently flat and stable for the selected system. Fastener depressions, irregular joints and abrupt plane changes can telegraph through adhered panels or interfere with trim profiles, making substrate preparation part of the performance of the finished wall.

Fibreglass-mat gypsum panels replace conventional paper facings with inorganic mat surfaces, reducing the cellulose content exposed at the board faces. This can provide enhanced mould and moisture resistance in suitable back-of-house applications. Their finishing characteristics can differ from paper-faced gypsum, so joint treatment, primers, adhesives and decorative finishes should remain compatible with the particular manufacturer's instructions rather than assuming every gypsum substrate behaves identically.
Fibreglass-reinforced plastic panels are frequently used where a durable, washable surface is desired over an appropriate wall substrate. FRP sheets are commonly supplied in approximately 4 × 8 ft panels, although other sizes are available, and installations can use adhesive with mouldings at joints, inside corners and terminations. Because thin panels can follow substrate irregularities, the underlying drywall needs a stable plane before FRP installation rather than relying on the plastic sheet to conceal poor wall preparation.
Dining and food-service walls may be wiped frequently to remove grease, food residue and general soil, placing different demands on the coating system than a low-contact office wall. Washable commercial coatings can provide greater scrub resistance where painted gypsum remains exposed, while more demanding zones may require another finish material altogether. Selecting the surface according to cleaning frequency and exposure helps prevent premature coating deterioration without specifying moisture-resistant drywall where the actual requirement is a more durable decorative finish.

Drywall cutting, board handling and sanding can generate gypsum dust and other construction debris that should remain separated from food preparation, storage and service areas. Temporary barriers and controlled work zones can isolate renovation activity from operating portions of the restaurant. Construction access should also be planned so drywall sheets, tools and waste do not travel unnecessarily through active kitchen or dining areas.
Restaurant renovations often operate within short shutdown periods because every additional closed day can affect revenue. Framing, boarding and finishing should therefore be coordinated with plumbing, electrical, HVAC, millwork and equipment installation before work begins. Drying-type joint compound also requires sufficient drying between applications, while setting compounds are available with approximate working-time designations such as 20, 45 and 90 minutes where appropriate to the finishing system; neither should be confused with guaranteed project completion times.
Stainless-steel preparation tables, cooking appliances, refrigeration equipment and ventilation components may remain inside a restaurant during partial renovations. These surfaces require suitable protection from gypsum dust, joint compound and impact during material handling. Fixed equipment can also restrict access to walls, making the order of drywall work important so inaccessible areas are completed before appliances, cabinetry or food-service fixtures are returned to their operating positions.
Construction containment does not eliminate the need for final cleaning before a renovated food-service area returns to operation. Fine drywall dust can settle on ledges, fixtures and horizontal surfaces beyond the immediate work location, particularly if uncontrolled airflow distributes particulate. Removing construction materials, vacuuming appropriate surfaces and allowing the restaurant operator to complete required sanitation procedures creates a clear transition between drywall work and reopening the food-service environment.
Sometimes, but only if the substrate, exposure conditions and FRP manufacturer’s requirements allow it. FRP is a finish layer, not a cure for an unsuitable wall assembly. Areas exposed mainly to cleaning and humidity may permit gypsum substrates, while locations subject to direct and repeated water exposure may require a different backing system. Adhesive compatibility, substrate flatness and wall condition should be confirmed before installation.
Commercial kitchens often contain dense concentrations of plumbing, electrical, refrigeration, gas and ventilation services. Each penetration can affect moisture control, sanitation, maintenance access and, in some assemblies, fire or acoustic performance. Openings therefore need to be coordinated with the specific service rather than treated as generic cut-outs after the drywall is complete.
Moisture resistance describes how the gypsum product itself tolerates elevated humidity or incidental moisture, while washability describes how the exposed decorative finish withstands repeated cleaning. A moisture-resistant board can still have an unsuitable surface coating for frequent scrubbing, and a highly washable coating does not make standard drywall appropriate for persistent dampness. Both substrate and finish need to match the actual restaurant environment.
These locations experience repeated humidity, splashing and cleaning, and can also conceal slow plumbing leaks behind equipment. Deterioration often begins where water reaches cut edges, penetrations, damaged sealant or poorly protected transitions. Using a suitable wall system helps, but long-term performance still depends on keeping joints, plumbing connections and sanitary finishes intact.
Where valves, cleanouts, controls or other serviceable components are concealed within a partition, permanent access can be more practical than repeatedly cutting and repairing the wall. Panel size and location should allow the actual component to be reached without dismantling major equipment. This is especially useful in kitchens where future maintenance access may be limited once appliances and millwork are installed.
